EDOMAE OMAKASE
Edomae is often referred to as “Edo Style” aka old-world Tokyo. A style of cooking that was invented about 200 years ago. Essentially, it’s a very delicate technique that treats the fish with either cooking or curing before it’s served. It starts with the finest and most fresh ingredients possible and uses specific methods to bring out the hidden natural umami flavors out of each piece of fish.
